Sunday: Lil' Cheddar Meatloaves (feed the freezer too!), Baked Potato and Salad

A look back at 2014
A look back...
I'm sitting here thinking about the new year that is just days away. I'm doing a little reflection. I always like to set goals for myself. I always want to be a better person. Sometimes it just doesn't happen for me. But I want to and and I try to. I thought I would start by looking back at what I wanted to accomplish in 2014 and see how that turned out.
I went HERE to read my 2014 goals. So, I didn't accomplish everything and I would say that most of those goals will be repeated this year. I'm a work in progress and what I wanted then I still would like to happen again this year. So when you ready my New Years post you might feel a little deja vu, I'm just saying...
One thing I did accomplish, and it's a big one, is to get my house listed for sale. It happened much later in the year than what I would have liked, but what can you do? It took many months of hard work by everyone to accomplish this. I have to give a big thanks to my two nephews who spent many days and weekends here working and making extra cash to help their poor aunt and uncle get the house ready to go on the market. They did an excellent job and some of the work they did would have cost us a lot more if we had hired professionals to do the job. Thank you, thank you, thank you. We couldn't have done it without you.
We've had two open houses, several house showings and one offer which we countered but never heard back from. We feel like things will start picking up again closer to spring and I am praying that our home will sell then, if not sooner. I've already found the house I like, but I don't think it will still be there by the time ours sells. She keeps lowering the price and someone lucky person is going to scoop that up. I'm really learning to be patient. It's a virtue, you know?
So, maybe I didn't accomplish much in my personal life, but I did accomplish something I have been wanting for a long time, years really. Getting this house on the market was such a relief for me. It was hard work. It was for us anyway. We are hoping our next home will be our forever home and we won't have to go through this again.
My husband is continuing to work at his most excellent job! (Yes, I watched Ted and Bill's Most Excellent Adventure recently, don't judge). I don't mean to brag, but after 3 years of unemployment, I can't say enough good things about the job he has with TVA. It is a real blessing. He lives at the lake (Aunt Pat's lake house), as it is closer to work and he has our four cats there so they are not in our home while it is for sale. He comes into town on his days off. I miss my cats terribly and may drive out to see them tomorrow. But it sure is nice not to have litter boxes to care for here! Can I get an Amen? All you cat owners know what I'm talking about. Uh huh...
Robyn continues to make new friends and enjoying her sophomore year at her school. She is my greatest blessing and I love that girl so much. She is going to join me in losing weight in 2015 and we are very excited about that. She is growing and maturing very fast. Time has really flown by.
We have big dreams and plans for our new home. I'm excited to get moved and to unpack all our boxes that are in storage. We have filled two storage units and I dare say there is still more that could leave our house to make it look more presentable. We have nearly 3000 square feet and we managed to fill every square inch of it in the last 15 years! Yep, that's why I named my blog Chaos Cottage.
My parents are doing well and I enjoy being with them and visiting them more than ever. I have the most wonderful mother-in-love who loves us very much. She is loved by us all but by Robyn more than anyone! She has spent the last 3 weekends at her house and I'm afraid she is going to move in with her! Just kidding, I think. But it is her 2nd home!

This is a copycat recipe and I'm not sure where I got it. I've had it a long time. I'm using gold potatoes as that is what I have on hand and they are so delicious! And I'm grilling on top of the stove with a grill pan.
CAJUN
STEAK AND POTATOES - Like Applebee's Bourbon Street Steak
2 T. dry Cajun seasoning
2 T. olive oil, divided
2 lb. boneless sirloin steak, about 1 1/2" thick
1 medium onion, halved, cut into 1/4" thick slices
1 clove garlic, minced
1 lb. small red potatoes, quartered
1/2 t. salt
1/4 t. pepper
2 T. dry Cajun seasoning
2 T. olive oil, divided
2 lb. boneless sirloin steak, about 1 1/2" thick
1 medium onion, halved, cut into 1/4" thick slices

Prepare grill for direct-heat grilling. Combine seasoning with 1 T. oil; brush over steak. Grill, turning once, until meat thermometer inserted into center registers 140 degrees F for medium-rare, 8-9 minutes per side. (I like mine cooked longer) Meanwhile, heat remaining oil in large nonstick skillet over medium heat. Add onion and garlic; cook, stirring occasionally, 2 min. Add potatoes; stir in salt and pepper. Cover. Cook, stirring occasionally, until potatoes are tender, 10-12 min. Stir in 1 T. parsley. Transfer steak and potato mixture to serving platter; sprinkle with remaining parsley.
Makes 6 servings; Per serving: 408 cal; 33 g. protein; 22 g. fat (8 g. saturated); 102 mg. chol; 17 g. carbs; 810 mg. sodium, 2 g. fiber; 1 g. sugar

Red Beans and Rice

1 t. olive oil
1 c. chopped onion
1 ½ c. instant rice, uncooked (I used instant brown rice)
¼ t. ground red pepper (I used red pepper flakes)
1/8 t. paprika
3 bay leaves
two-15 oz. cans red kidney beans, rinsed and drained
two-14 oz. can no salt beef broth
1 t. olive oil
1 c. chopped onion
1 ½ c. instant rice, uncooked (I used instant brown rice)
¼ t. ground red pepper (I used red pepper flakes)

3 bay leaves

(I also added about 1/2 t. sea salt)
6 oz. sliced Canadian bacon, coarsely chopped
1 c. seeded, chopped tomato
3 T sliced green onions

Coat
a Dutch oven with Pam; add oil. Place over medium high heat until
hot. Add onion, sauté until tender. Add rice and next 6
ingredients. Bring mix to a boil; cover, reduce heat and simmer 15
minutes or until liquid is absorbed and rice is tender. Remove and
discard bay leaves. To serve: ladle into 6 individual bowls and top
evenly with tomato and green onions. Makes 6, 1 ½ c. servings. 247
calories, 4.3 g. fat. per serving.
I made this recipe tonight for my family and they really liked it. I will be making it again and thought I would share. It's a really quick meal too.

Ham Ravioli Bake
1, 24 oz. pkg. frozen cheese ravioli
1 1/2 cups cubed ham
1 1/3 c. sliced mushrooms
1/4 c. chopped onion
1/4 c. chopped green pepper
1 T vegetable oil
1 jar alfredo sauce
Cook ravioli as package directs. Meanwhile, in a large skillet, cook the ham, mushrooms, onions and green peppers in oil over medium heat 4-5 minutes until veggies are tender crisp.
Spread 2 T alfredo sauce in greased 8 inch square baking dish. Stir remaining sauce into ham mixture; cook 3-4 minutes or until heated through.
Drain ravioli; place half in prepared dish. Top with half of ham mixture. Repeat layers. Cover and bake 375 degrees 20-25 minutes or until bubbly. 4 servings.

I'm back!
My house is officially on the market tomorrow! Pray that it sells quickly and at a fair price. We are also putting an offer on another home later in the week. I feel that it is perfect for our family and Lord willing we would love to own it.
My husband and four cats have been living at the lake. Hubby comes home every week for a night or two. This keeps our home cat free! His commute to work has also been cut in half by being there so it is not too much of a hardship. I would be there too if not for the fact that we live 10 minutes from our daughter's school. The lake would be a minimum of a one hour commute. Not so good. Now when we move to the area we want to live in, our commute will increase, but nothing like driving in from the lake. BTW, when I say "the lake" I am referring to a family lake house and we are not having to pay rent to stay there. Isn't that wonderful? Thank you Aunt Pat!

Taking a short break.
I've been MIA for a couple of weeks. I've been a busy girl. We have been preparing our home to sell and it has keep us busy and also, we decided to move to Robert's aunt's lake house while doing this and while it is being shown. We have four cats and it is better not to have pets in the home while trying to sell it. Also, hubby works days and nights. And when he is working nights he has to sleep during the day, and having to get up and leave for a house showing would be very difficult. We will be back and forth some. And, most important of all, is that we are very messy people, and the stress of keeping our home show ready would just be unbearable. Right now I'm in the house for a few days doing some work. It's been nice to have internet and cable as we don't have that at the lake. It can be a distraction though...
My menu planning has gone out the window. It's just to difficult to plan too far ahead right now. But I will be back soon with that and will try to keep you updated with the house sale.

Monday: Moving Day Soup (recipe below)
Tuesday: Pork Chops, Noodles, Caesar Salad
Wednesday: Ham and Cheese Ziti (freezer meal), Sauteed Zucchini and Squash

Friday: Polish Stew (recipe below), Salad
Saturday: Chicken Stir-fry, Jasmine Brown Rice

Moving
Day Soup
1
lb. ground beef
2
qt. water
1
½ t. salt
¼
t. garlic salt
¼
t. onion salt
1
can solid pack tomatoes
1
can mixed vegetables
4
oz. egg noodles
Cover
ground beef with water in a heavy 6 qt. kettle; add seasonings.
Breaking beef apart, cook gently until done. Add tomatoes, simmer 1-2
hours. Stir in vegetables; bring to boil. Add noodles, boil 5
minutes or until noodles are tender. Season to taste. 8 servings.
Polish
Kielbasa Stew

large potatoes, peeled and cut in 2 inch pieces
1
can cut green beans, drained ( I use two)
1
Polish kielbasa, cut in 1 inch pieces ( I use lite smoked sausage)
salt,
pepper (opt)
Spray
slow cooker with vegetable coating. Add ingredients and enough water
to cover potatoes. Cook on low all day. Serve with cornbread.

Herb Grilled
Chicken on Salad Greens
2/3 c. olive oil,
divided
1 t. fresh grated
lemon zest
¾ t. fresh basil or
¼ t. dried basil
¾ t. fresh oregano,
or ¼ t. dried oregano
¼ t. garlic powder
4 boneless,
skinless, chicken breast halves
3 T fresh lemon
juice
¼ t. salt
1/8 t. black pepper
1 c. chopped fresh
tomatoes
1 bunch torn romaine
lettuce leaves
In a small bowl,
combine 1/3 c. olive oil and next 4 ingredients. Place chicken in a
shallow baking dish and pour marinade over chicken, turning to coat
well. Cover and refrigerate at least 4 hours, turning occasionally.
Prepare grill.
Remove chicken from
marinade; discard marinade. Grill chicken over medium heat 5-8
minutes on each side or until done. In a small bowl, combine
remaining 1/3 c. oil, lemon juice, salt and pepper. Mix well; add
tomatoes. Slice chicken into ½ inch strips. Divide lettuce among 4
plates. Place chicken on greens. Top with tomato mixture. Chicken
may be grilled ahead of time and served cold.

6 boneless chicken breasts

can cream of mushroom soup
1/2
pt. sour cream

(6 oz.) jar dried, chipped beef
Mix
together soup, sour cream and dried beef. Roll chicken in the mixture
and place in casserole dish. Pour remaining mixture over chicken.
Bake covered at 200 for 4 hours. Serve over rice or noodles.
Note:
This can be cooked in a slow cooker or Crock Pot for 4 to 6 hours.

Happy New Year 2014!
This is supposed to be Father Time! LOL
Happy new year everyone! I am sitting in our condo at Fairfield Glade on our last full day of vacation. We are all coming back a day early. My back has been hurting and I have been very stiff and sore all week and hubby has to go to work Friday night and will need a good days sleep before that, so we are all leaving early. I hate it when my back acts up like this, especially while on vacation. I was really wanting to go into town and check out the after Christmas sales but it doesn't look like that will happen. I also wanted to drive to Cookeville to visit my nephew and take him some cookies. I hope my back is well enough on Friday for me to go grocery shopping as I know our house will need restocking after being away.
While sitting here in my chair, I did take some time to think about some goals to aspire to in 2014. Here is what I would like to see happen in my life this year.
As far as my marriage goes, I would like to see hubby and I have a date night/day at least once a month. This will take some effort and planning, as he has a crazy work schedule. But I do think one date is possible, don't you? I was thinking we could take turns planning the date.
I think we should do something as a family once a month as well. That could be in or out. We could always stay in and play board games or something like that. Honestly, we do spend a lot of time together anyways. We live in this huge house but we are always in the same room together, either watching TV, reading, or spending time on our laptops and tablets. But doing something together that doesn't include electronics would be refreshing.
I would also like to spend more time with my parents. Time is passing by so quickly. They live a good 45 minute drive from me which is very doable. I just need to make the effort to do it.
Also, I am hoping, praying, and believing that we will finally move this year. I have wanted/needed to do this for so long. With my back, knees and health problems, I have needed to get out of this home with three floors into something easier for me to maneuver in. This will not be an easy task. It is hard work to sell your home and move into a new one. But I want it and need it very badly. My doctor believes I have fibromyalgia and that makes for a lot of days when I don't have the energy to do the things I want or need to do. I will need to rely on my husband and daughter to help do what needs to be done to accomplish this task.
As for myself, I need to make a lot of changes in my life. I have felt so bad for so long. I want to feel good! I need to make changes in my diet and I really need to incorporate exercise into my day. I know I am not able to do much but walking on the treadmill regularly is my goal. I may have to start out easy but will build up from that. That and some work with some light hand weights may be all I can accomplish for now. I know I will still have good days and bad days but at least I can say I am doing all I can to feel better.
I need to get in more water and remember to take ALL of my vitamins. I have slacked off on this and need to do this for my health. Also, sticking to a regular bedtime would be helpful. Most school days, I get up early, around 6:30 to see that daughter gets ready for school and I drive her to school. A lot of days, if I didn't get in all my sleep, I return to bed. I hate that. I feel like so much of my day is wasted. When hubby is off he often takes her to school which allows me to sleep in if needed. I would like to get to bed early because it does take me a while to fall asleep. By going to bed when most people do doesn't work for me because I need an hour or so just to feel sleepy enough to go to sleep, if that makes sense. So I need to get an earlier start on that.
Spiritually, I need to spend more time in God's work and prayer. Hardly a day goes by that I am not thanking God for my blessings and asking for his help in my life, but I have really slacked off on reading his Word. I used to do this nightly. I would like to get back into that reading plan but also reading during the day when I am fully awake and able to "study" more. Due to my insomnia and health problems, I have missed attending our Adult Bible Fellowship (Sunday School class) and have only attended church services on occasion as they start at 11:00 and daughter's class is also at 11:00. I am hoping that by getting into a bedtime routine may help me to be able to attend ABF more faithfully. I miss that fellowship.
As someone who has chronic health problems, I tend to let my appearance go. I spend a lot of days in my pj's. I'm just saying. I need to make more of an effort to get fully dressed and even put makeup on my face. Sometimes, just doing that, is difficult, but it is worth it and can lift my spirits a bit.
I want to journal more in my gratitude journal and blog more in 2014. This blog has become a diary of sorts. I use it to track what I am feeding my family and sometimes use it as a form of accountability for me. I would like to put more effort into that as it is something that is not physically hard and I am on my laptop quite a lot through out the day anyway.
Once I am settled into our new home, I want to return to my love of scrapbooking and photography. I have put that on the back burner for way too long. But I won't have time or be able to make time for that for a while. I am hoping to have a designated scrapbooking room in our new home as well. My scrapbooking room here has become a catch all and is so piled up I couldn't get in there and scrapbook even if I wanted too!
So that's what's on my mind. These are things I would like to see accomplished this year. I feel like it is doable and there is nothing really outrageous here. How about you? Do you set goals for yourself at the first of the year?

I hate it when my back acts up like this, especially while on vacation. I was really wanting to go into town and check out the after Christmas sales but it doesn't look like that will happen. I also wanted to drive to Cookeville to visit my nephew and take him some cookies. I hope my back is well enough on Friday for me to go grocery shopping as I know our house will need restocking after being away.
While sitting here in my chair, I did take some time to think about some goals to aspire to in 2014. Here is what I would like to see happen in my life this year.
As far as my marriage goes, I would like to see hubby and I have a date night/day at least once a month. This will take some effort and planning, as he has a crazy work schedule. But I do think one date is possible, don't you? I was thinking we could take turns planning the date.
I think we should do something as a family once a month as well. That could be in or out. We could always stay in and play board games or something like that. Honestly, we do spend a lot of time together anyways. We live in this huge house but we are always in the same room together, either watching TV, reading, or spending time on our laptops and tablets. But doing something together that doesn't include electronics would be refreshing.
I would also like to spend more time with my parents. Time is passing by so quickly. They live a good 45 minute drive from me which is very doable. I just need to make the effort to do it.
Also, I am hoping, praying, and believing that we will finally move this year. I have wanted/needed to do this for so long. With my back, knees and health problems, I have needed to get out of this home with three floors into something easier for me to maneuver in. This will not be an easy task. It is hard work to sell your home and move into a new one. But I want it and need it very badly. My doctor believes I have fibromyalgia and that makes for a lot of days when I don't have the energy to do the things I want or need to do. I will need to rely on my husband and daughter to help do what needs to be done to accomplish this task.
As for myself, I need to make a lot of changes in my life. I have felt so bad for so long. I want to feel good! I need to make changes in my diet and I really need to incorporate exercise into my day. I know I am not able to do much but walking on the treadmill regularly is my goal. I may have to start out easy but will build up from that. That and some work with some light hand weights may be all I can accomplish for now. I know I will still have good days and bad days but at least I can say I am doing all I can to feel better.
I need to get in more water and remember to take ALL of my vitamins. I have slacked off on this and need to do this for my health. Also, sticking to a regular bedtime would be helpful. Most school days, I get up early, around 6:30 to see that daughter gets ready for school and I drive her to school. A lot of days, if I didn't get in all my sleep, I return to bed. I hate that. I feel like so much of my day is wasted. When hubby is off he often takes her to school which allows me to sleep in if needed. I would like to get to bed early because it does take me a while to fall asleep. By going to bed when most people do doesn't work for me because I need an hour or so just to feel sleepy enough to go to sleep, if that makes sense. So I need to get an earlier start on that.
Spiritually, I need to spend more time in God's work and prayer. Hardly a day goes by that I am not thanking God for my blessings and asking for his help in my life, but I have really slacked off on reading his Word. I used to do this nightly. I would like to get back into that reading plan but also reading during the day when I am fully awake and able to "study" more. Due to my insomnia and health problems, I have missed attending our Adult Bible Fellowship (Sunday School class) and have only attended church services on occasion as they start at 11:00 and daughter's class is also at 11:00. I am hoping that by getting into a bedtime routine may help me to be able to attend ABF more faithfully. I miss that fellowship.
As someone who has chronic health problems, I tend to let my appearance go. I spend a lot of days in my pj's. I'm just saying. I need to make more of an effort to get fully dressed and even put makeup on my face. Sometimes, just doing that, is difficult, but it is worth it and can lift my spirits a bit.
I want to journal more in my gratitude journal and blog more in 2014. This blog has become a diary of sorts. I use it to track what I am feeding my family and sometimes use it as a form of accountability for me. I would like to put more effort into that as it is something that is not physically hard and I am on my laptop quite a lot through out the day anyway.
Once I am settled into our new home, I want to return to my love of scrapbooking and photography. I have put that on the back burner for way too long. But I won't have time or be able to make time for that for a while. I am hoping to have a designated scrapbooking room in our new home as well. My scrapbooking room here has become a catch all and is so piled up I couldn't get in there and scrapbook even if I wanted too!
So that's what's on my mind. These are things I would like to see accomplished this year. I feel like it is doable and there is nothing really outrageous here. How about you? Do you set goals for yourself at the first of the year?
