My family was ill last week so I didn't share my menu plan. But a new week is upon us and we are on the mend! Here is what I plan to feed my family this week.<br />

Monday: Lovely leftovers from the previous week. (I made several soups)<br />

Tuesday: Since my hubby worked nights Friday, Saturday, and Sunday, we are having our celebratory Christmas meal today. Here is what I have planned: Ham, Turkey with Stuffing, Deviled Eggs, Green Bean Casserole, Mashed Potatoes and Gravy, Macaroni and Cheese, Rolls and Cheesecake and Sweet Potato Pie for dessert.<br />

Wednesday: No doubt, plenty of leftovers.<br />

Sunday: New Years Day! Navy Bean Casserole and Fried Cabbage with Onions.<br />

<b></b>16 oz. tomato sauce</div>

1/4 cup chopped onions</div>
<div style="text-align: left;">
1 teaspoon dried parsley flakes</div>
<div style="text-align: left;">
1/2 teaspoon crushed oregano</div>
<div style="text-align: left;">
1 teaspoon crushed basil</div>
<div style="text-align: left;">
3/4 teaspoon salt</div>
<div style="text-align: left;">
1/4 teaspoon pepper</div>
<div style="text-align: left;">
2-10 oz. pkg. frozen chopped spinach, cooked and drained</div>
<div style="text-align: left;">
1 pint cottage cheese</div>
<div style="text-align: left;">
8 oz. mozzarella cheese slices</div>
<div style="text-align: left;">

Brown beef in skillet; pour off fat. Stir in tomato sauce, onions, herbs, 1/2 teaspoon salt and pepper. Simmer uncovered 10 minutes stirring occasionally. Combine spinach, cottage cheese and remaining 1/4 teaspoon salt. Spoon spinach around edge of baking dish (9x13). Pour beef mixture into center. Cut each cheese slice into 3 strips and arrange in lattice design over meat. Bake at 375 degrees for 20 minutes.</div>
