Freezer Meal-Picnic Chicken, Corn on the Cob, Oven Fries


Buttery Cooked Carrots

1 pound baby carrots
1/4 cup margarine
1/3 cup brown sugar

1. Cook carrots in a large pot of boiling water until tender. Drain off most of the liquid, leaving bottom of pan covered with water. Set the carrots aside.
2. Stir margarine and brown sugar into the water. Simmer and stir until the margarine melts. Return carrots to the pot, and toss to coat. Cover, and let sit for a few minutes to allow flavors to mingle.

Crispy Ranch Bread Sticks

2 tablespoons dry ranch dip mix
2 tablespoons sour cream
1 package(10 ounce)refrigerated pizza dough
butter, melted

1. Preheat oven to 400. Combine dip mix and sour cream in small bowl, set aside.
2. Unroll pizza dough on lightly floured work surface. Shape dough into 16x10 inch rectangle. Brush with melted butter. Spread dip mixture evenly over top of dough; cut into 24(10 inch) strips. Give each strip 4 or 5 twists.
Place bread sticks, 1/2 inch apart, on parchment lined or well greased baking sheets. Bake 10 minutes or until golden brown. Serve immediately

Classic Macaroni Salad

2 c. cooked macaroni
2 eggs hard-boiled, chopped
¼. c. celery
¼ c. chopped onion
1/3 to ½ c. mayonnaise or salad dressing
2 t. sugar
2 t. vinegar
½ t. salt or to taste
½ t. mustard
pepper
Combine all ingredients, stir well. Cover and chill several hours before serving. 4 servings.

Menu plan for the week of February 22nd



This week I am posting all three meals. Seems like when I leave off breakfast, especially, I am at a lost as to what to fix. So here is what I have planned for this week:

Monday:

Breakfast-Chocolate Malt O Meal for dd, Oatmeal and Yogurt for dh and I
Lunch-Leftover Ham and Cheese Ziti
Dinner-Mexican Chicken Rolls (from the freezer), Refried Beans, Rice

Tuesday:

Breakfast-Pancakes and Link Sausage
Lunch-Peanut Butter Sammies, Yogurt, Apple Slices
Dinner-Out to P.F. Changs, birthday gifts to dh and I from my mother-in-love

Wednesday:

Breakfast-Canadian Bacon, Eggs, Biscuits
Lunch-Soup
Dinner-Polish Kielbasa Stew, Cornbread

Thursday:

Breakfast-Coffeecake (recipe to follow)
Lunch-Leftovers
Dinner-Chicken and Cheese Stuffed Shells (from the freezer), Broccoli Salad, Rolls

Friday:

Breakfast-Farmers Breakfast (recipe to follow)
Lunch-Visit to Mom and Dad's (either eat there or at favorite Chinese joint)
Dinner-Sausage Casserole (recipe to follow), Green Beans, Rolls

Saturday:

Breakfast-Sausage and Cheese Muffins (extras go in freezer)
Lunch-The World's Greatest Potato Soup (dh's fav)
Dinner-Leftover Buffet!

Sunday:

Breakfast-Bagels and Cream Cheese
Lunch-Leftover Potato Soup
Dinner-Teriyaki chicken (freezer meal), Rice, Egg Rolls


Coffee Cake

2 c. Bisquick
2 T sugar
1 egg
2/3 c. water or milk
Streusel topping (below)

Heat oven to 400 degrees. Grease round pan. Mix all ingredients except topping; beat vigorously 30 seconds. Spread in pan; sprinkle with topping. Bake 20-25 minutes. 8 servings. Streusel topping: Mix 1/3 c. Bisquick, 1/3 c. packed brown sugar, 1/ 2 t. cinnamon, and 2 T firm margarine until crumbly.

To make muffins: grease bottoms of 12 medium muffin tins. Spoon batter into cups. Bake 15 minutes.

Farmer's Breakfast

6 bacon strips, diced
2 T diced onion
3 medium potatoes, cooked and cubed
6 eggs, beaten
salt and pepper to taste
½ cup shredded cheddar cheese

In a skillet, cook bacon until crisp. Remove to paper towel to drain. In drippings, sauté onion and potatoes until potatoes are browned, about 5 minutes. Pour eggs into skillet; cook stir gently until eggs are set and cooked to desired doneness. Season with salt and pepper. Sprinkle with cheese and bacon; let stand 2-3 minutes or until cheese melts. Yield: 4-6 servings.

Colleen's Sausage Casserole

1 lb. hot sausage
1 large onion, chopped
1 green bell pepper, chopped
2 cans cream of mushroom soup
1 ¼ cup instant rice
8 oz. sharp grated cheese

Crumble sausage in skillet and brown, drain well. Mix sausage, onion, and pepper in a large bowl. Add uncooked rice and then soup. Add cheese last, saving a little to sprinkle on top. Pour into casserole and bake 325 degrees for 1 hour uncovered.

Thinking about next week


Tomorrow starts the first day of a new week. I am feeling much better. This cold has just about left me. I see my husband coming back to life and daughter is better too. So, my mind begins to wander into the coming week and thinking about all the things I need to do to get caught up from doing nearly nothing for a good while. Here are my plans:

1. Grocery shopping
2. Haircut appointment
3. Dh needs a cut too.
4. Dh and I celebrate our birthdays this week-dinner out
5. Get drivers license renewed - new picture time - yipee! - not!!!
6. Awana/Narnia Class
7. Small Group
8. Visit mom and dad
9. Make homemade bread and goodies for daughter's lunches (instead of store bought)
10. Give the house a good going over-way over due.
11. Get caught up on reading/Chronological Bible and Narnia
12. Possibly try to practice crocheting again. I've only learned a few stitches.

Also, due to being sick, I didn't really get to participate in Frumpy to Fad
like I should and will attempt to do that this week. I want to start each day showered, dressed, including shoes and do my hair and makeup, just like I would if I was leaving the house to shop or go to church or work if I worked outside the home. This way I will be ready for whatever the day brings.

Winter of our discontent

This last month has been a month of headaches, sniffles, coughs, and other icky and nasty stuff! We are sick of being sick. Pray that we get better, will ya?

Dh and I have just been vegging in front of the tv and watching the Olympics, Survivor, Amazing Race and American Idol. We don't feel like doing much of anything else.

I am so glad that our daughter is able to entertain herself when mom and dad aren't up to much fun. She plays on her Nintendo DSi, does her homework, talks to friends on the phone, plays on the computer, chases one of the cats, and fetches cough drops and G2's for her parents. She's a good girl!

We haven't been to church and we didn't host our small group in our home this week. We didn't want to give anyone our germs. We're thoughtful that way.

Come on Spring, we need you!

I made the cookies!

 


Oh my these were good. I bagged up several by two's for dd to take to school for her after school math mania class and for dh to take to the hospital tomorrow for his mom and him to enjoy while waiting while their aunt has knee surgery. I thought a couple of these and a cup of coffee or two would go a long way to lift their spirits.

I now want to try these with other cake flavors. I am thinking of chocolate, definitely, but maybe lemon too!

Valentines Tablescape




On Valentines evening I prepared dinner and set the table in the dining room for our dinner. I made a cute and quick little tablescape with a Valentine's theme. The Princess and the Frog salt and pepper shakers have magnetic lips and are so cute. Reminds me of my dear hubby and I.

I set the table with my Princess House Fantasia Crystal, my Southern Living stainless, and my Colin Cowie golden chargers, napkin rings, and tray. Robyn really enjoyed having a "fancy" dinner with mom and dad.

I want to make these!


I have on my menu plan this week to make red velvet cupcakes for my small group. I found this recipe here http://www.mommyskitchen.net/ and now I want these. Wah...I think I will make these on Valentines Day.



Red Velvet Sandwich Cookies

1 package red velvet cake mix
(I used duncan hines)
2 - eggs
1/2 - cup oil
(or butter flavored shortening)

Heat oven to 350 degrees. Add oil and eggs to cake mix and blend together. Roll dough into balls (a little larger than a quarter). Place on greased cookie sheet. Bake for 8 minutes. Remove from oven and let cool on sheet (until warm). Remove cookies from sheet and place on cooling rack.To assemble the cookies, in a pastry bag with a 1/2 inch, round tip (you can always use a zip lock bag with a round tip or just use a butter knife)add about a tablespoon of filling into the center of one cookie. Place another cookie similar in size on top of the filling. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream.

Cream Cheese Filling Recipe:

1 - stick butter (1/2 cup)
1 - 8oz package philly cream cheese
3-4 cups - confectioner's sugar (depending on desired consistency)
1 - tsp vanilla extract

Cream butter and add cream cheese and vanilla extract. Mix well. Add confectioner's sugar slowly until you reach your desired consistency. If the mixture is to thick add a bit of milk until you have the consistency you want.

The cream filling mixture makes enough for two batches of cookies. I doubled the cookie recipe and had plenty of filling.

Got my first AARP application in the mail today. Twice, no less. One came here at the house and the other at our p.o. box. Aargh... hubby is giving me a hard time, as I am four years older than him. His day is coming. Watch out hubby!

My Menu for week of Feb 8th




Monday: Freezer Meal-Chicken Taco-Bake, Mexi-Corn (love those freezer meals!)

Tuesday: Sausage Quiche (freezing one), Grapes, Crescents or Biscuits (I have so many lovely leftovers, that I don't need to cook tonight. I may move this one to tomorrow night and not eat at church.)

Wednesday: Dinner at Church

Thursday: Crock Pot White Beans and Ham (recipe to follow), Broccoli Cornbread (recipe to follow) Small Group-Chocolate Covered Strawberries and Red Velvet Cupcakes

Friday: Freezer Meal-Chicken Enchiladas, Tortilla Chips and Salsa (can you tell we like Mexican food?)

Saturday: Tuna Casserole (recipe to follow), Peas, Rolls (trying to find a Tuna Casserole that my family likes)

Sunday: Chicken Fried Chops (recipe to follow), Garlic Potatoes (box), Brussels Sprouts, Macaroni and Cheese (dd's fav), Rolls, Chocolate Ribbon Pie (dh's fav-recipe to follow)


CROCKPOT WHITE BEANS 'N HAM


1 (16oz) package Great Northern White Beans
2 cups cubed ham (I used leftover ham) OR use 1 ham hock
8 cups water
1 carrot, chopped
1/2 cup chopped onion
2 celery stalks, chopped
1 teaspoons salt or to your taste
Fresh Ground Pepper

Wash beans and the place in crockpot with all ingredients. Cook on high 4-5 hours. (I don't add salt until the beans are cooked or it can result in tough beans).


Broccoli Cornbread

10 oz. pkg. frozen chopped broccoli, thawed
8 ½ oz. Jiffy cornbread mix
4 oz. shredded Cheddar cheese
½ cup margarine, melted
½ t. salt
½ t. garlic powder
¼ t. ground red pepper
3 large eggs, lightly beaten
1 medium onion, chopped

Press broccoli between paper towels to remove excess water. Combine cornbread mix and remaining 7 ingredients; stir well. Stir in broccoli (mixture will be thick). Pour into a greased 8 inch square pan. Bake 375 degrees 25-30 minutes. Let cool slightly and cut into squares. A Seay favorite. Even Robyn eats this and gets the benefit of eating broccoli. This is almost too good!

Chicken-fried Chops

½ c. flour
2 t. salt
1/1/2 t. ground mustard
½ t. garlic powder
6 pork loins, ¾" thick, trimmed
2 T vegetable oil
1 can reduced fat cream of chicken soup
1/3 c. water

In a shallow bowl, combine flour, salt, mustard and garlic powder; dredge pork chops. In skillet, brown the chops on both sides in oil. Place in a slow cooker. Combine soup and water; pour over chops. Cover and cook on low 6-8 hours or until meal is tender. If desired, thicken pan juices and serve with the chops.


Chocolate Ribbon Pie

4 oz. (½ of 8 oz.) fat free cream cheese, softened
1 ½ c. cold fat free milk, divided
1 T sugar
2 c. thawed Cool Whip Lite Whipped Topping, divided
1 ready-to-use reduced fat graham cracker crumb crust (6 oz.)
1 pkg. (4 serving size) Jell-o Chocolate flavor Fat Free Sugar Free Instant Pudding and Pie Filling

Beat cream cheese, 1 T of the milk and sugar in medium bowl with electric mixer on medium speed until well blended. Gently stir in ½ cup of the whipped topping. Spread onto bottom of crust.

Pour remaining milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes or until well blended. Spread over cream cheese layer.

Refrigerate 4 hours or until set. Just before serving, spread remaining 1 ½ cups whipped topping over pudding layer. Store leftover pie in refrigerator.

Makes 8 servings, 190 calories, 6 g. fat, 3 g. saturated fat, 350 mg. Sodium, 29 g. carbohydrates

This recipe came off the Cool Whip Lite container.

I can see a resemblance here. This is just so me. Right now I am having my first cup of ambition, and trying to get the sleep out of my eyes.

We had a lovely snow over the weekend. This morning I was looking out my kitchen window while filling the coffee pot and noticed the sparkle in the snow. It is full of icy crystals and with the sun shining on it, it was dazzling. The roads are clear and school started two hours late though. I am posting here to keep me accountable and remind me of my to-dos. Here is what is on my to-do list this week:
