The Homeschool Mother's Journal


In my life this week:  I've been lazy.  :(  Yep.  I'm guilty.  We went to see the movie, Brave, Sunday evening and I haven't been anywhere since.  I'm a bit of a house cat!  It's really been so hot out I didn't want and don't want to go anywhere!

Places we're going, people we're seeing:  My husband, daughter, and mother-in-law are leaving tomorrow for Ireland.  Yes, you read that right.  Ireland.  I'm not going.  I'm staying home to take care of the house and cats.  I'm not in the best of health for a trip like that.  Maybe one day when my old knees and back are better :)  I'll enjoy the photos and putting together their scrapbook afterwards.

My favorite thing this week was:  Finishing school!  Better late than never!  Whew.  We saved math for last and it was good to be done. 

Things I'm working on:  My family will be gone Saturday night through Thursday night.  I plan on getting some chores done around the house while they are gone.  No excuses.  Hopefully next week I can report the things I actually got done.

I'm praying for:  A safe trip for my family.  A fun time for them and many wonderful memories to last a lifetime.

I'm grateful for:  My MIL graciously taking my family to Ireland.  What a gift!

My menu for the week of June 25th


Breakfasts will consist of:  Yogurt Parfaits, Cereal, Muffins and Eggs, and Fruit

Lunch will consist of:  Leftovers, Sammies, Soup, Fruit, etc.

Monday:  Grilled Shrimp (thanks to a good friend who brought us shrimp back from his vacation), Grilled Chicken (for me), Alfredo Sauce and Fettucine, Asparagus, French Bread

Tuesday:  Sausage Casserole, Corn on the Cob, French Bread, Brownies a la Mode (frozen yogurt)

Wednesday:  Potato Soup (a hubby fav), Grilled Cheese Sammies

Thursday:  Porcupine Meatballs, Mashed Potatoes, Fried Corn (frozen), Peach Cobbler topped with Frozen Yogurt

Friday:  Spaghetti Casserole (make extra for freezer), Salad, Bread Sticks

Saturday:  Not sure (hubby and daughter leaving for trip to Ireland)

Sunday:  Ditto

I didn't post any recipes this week as these are all meals I've made before and are in my recipe section to the right.

I actually accomplished something on my to-do list!

I actually accomplished something that has been on my to-do list for quite a while.  I found an idea on Pinterest (yeah, like who hasn't), and I actually decided to do it.  I gave my fridge a much needed cleaning out and then covered the shelves with Press and Seal.  It doesn't look as beautiful as my clean shiny glass shelves would, but this will be much easier to clean.  I can just peel it off and put down new Press and Seal.  Thank you whoever came up with this idea.  Here is the picture from Pinterest.

 My store didn't have the pretty printed Press and Seal, only the plain, but it's okay.  It makes the glass look like frosted glass. 

So, even with the school year coming to an end, I finally found the time to do a chore that I had been putting off.  (patting myself on the back!)

Menu for week of June 18th


Some of these meals are repeats from last week's post because we got pizza one night and had leftovers another night.  You know how that goes.  So here is my plan for this week:

Breakfasts will be things liked Yogurt with Berries and Granola, Pancakes and Sausage, Toast with PB, Etc.

Lunch will be:  Leftovers, Soups, Sammies, Fruit, etc.

Monday:  Red Beans and Sausage, Cornbread

Tuesday:  Chicken Tetrazzini (freeze one), Corn on the Cob, Salad, Breadsticks

Wednesday:   Grilled Dawgs, Grillin' Beans, Creamy Potato Salad

Thursday:  Crock Pot Lasagna, Salad, Breadsticks

Friday:  Crock Pot Pork Chops, Macaroni and Cheese, Brussel's Sprouts

Saturday:  Mr. Food's Chicken Kiev (freeze extra for the freezer), Rice Pilaf, Asparagus, Rolls

Sunday:  Sammies and Chips day!

The Homeschooling Mother's Journal


In my life this week:  I have had another busy week of trying to finish up our homeschooling year.  All that is left is a Language Arts Review and daughter is about a third of the way through that, Bible and she should be finishing that up today or this weekend, and the dreaded Mathematics.  Ugh.  Hoping it will all be finished next week. I can't seem to get much of anything else done while I'm trying to race to the homeschool finish line.  I did get some makeup organization done in my bathroom and tossed some old products.  I'm in the process of giving the fridge a thorough cleaning.  I have two more shelves to go and the shelves on the door.  I am covering the shelves in Press and Seal to make cleaning them in the future much easier.  I got this idea from Pinterest.  Robyn and I went to the dollar theater (we call it that because Tuesday nights used to be $1) on Tuesday night and saw Journey 2 The Mysterious Island.  It was good.

In our homeschool this week:  See above.

Places we're going:  We are going up to my mom and dad's Saturday and celebrate Father's Day.  On Sunday we are going to a restaurant to celebrate Father's Day with my hubby! 

I'm cooking:  I'm making a banana pudding tonight to take to my dad tomorrow.

I'm reading:  I read book two of the Hunger Games and am now into book three.

Things I'm working on:  In my mind, I am making plans to declutter and organize some things while my family is gone to Ireland.  Until school is finished, it is very hard for me to begin any projects around the house.  But I can dream.

I'm grateful for:  my husband.  He is a wonderful man.  He loves me unconditionally.  God blessed me when he gave me Robert.

I'm praying for:  continued good test results for my husband at work, uninterrupted sleep for me, the strength to get through this school year, and the motivation to do some projects around the house.

Wednesday:  Red Beans and Sausage, Cornbread

Thursday:  Crock Pot Chops, Macaroni and Cheese, Brussels Sprouts

Friday:  Chicken Burgers, Oven Fries

Saturday:  Taking my dad out for dinner

Sunday:  Taking my hubby out for dinner

The Homeschooling Mother's Journal


In my life this week:  I'm having a hard time doing anything but racing to the homeschool year finish line.  I just want to get finished and have a nice long summer break.  Does that sound bad?  We always start out the school year lazily and then with vacations and breaks here and there, we find ourselves too far behind and the last few months of our school year are always a mad dash.  Next year I want to do it right.  It may be my last year homeschooling, as Robyn may be returning to the Christian school she attended through fifth grade for high school.  We'll see.  Anyway, I have lots of ideas and plans for when school is over but I don't want to start anything until we are finished with school.  That's just me.  So, stay tuned to see what I get into this summer.

In our homeschool this week:  Ditto above.  Working our butts off trying to finish.  As a reward, today, it is 12:30 and we still have yet to start school, but we are going to go to our local bookstore, for a change of scenery, and do our lessons there.  I have already printed off the lessons from our SOS and we are going to spend the afternoon in the cafe and enjoy a nice refreshing beverage.  I can peruse the bookshelves while daughter does her work!  Sounds like fun.  We are done with Science and will be finishing up History tomorrow.  The end is in sight!

Places we're going and people we're seeing:  After being gone two weeks in May, it is nice to be back home.  I don't plan on anymore trips until November, but daughter and hubby are going to Ireland in July.  When we finish our school year, I may do some nice one day excursions with daughter.  When it gets too hot, we don't go to Dollywood, so we may not be there for a while.

My favorite thing this week:  On Monday, Memorial Day, we ate dinner at Calhoun's on the river and it was so nice to eat out at a nice restaurant and visit with family.  Afterwards, we walked down to the river bank and watched the geese and fish fighting over food being tossed to them.  It was fun.

I'm reading:  Did I tell you I read the first book in the Hunger Games series?  I was on the fence about this one, as the subject matter seemed kinda icky to me, but decided to read the first one to make up my mind.  Hubby put it on my Kindle and I have to say I really liked it.  I read it very quickly.  But it is a quick read.  Daughter took my Kindle from me on our last week out of town and she read it very quickly as well and we are both looking forward to the next two installments.  So yay me and daughter for finishing a book.

I'm cooking:  Well, last night, I made a lovely dinner of Chicken Enchiladas and Refried Beans, and I think they were just as good as any we would get in a restaurant.  I just love Mexican food.  Tonight it is Italian as I am making Lasagna Rolls and making a pan for the freezer as well.  I enjoy cooking, just not the cleaning up.  LOL

I'm grateful for:  Yesterday my hubby went whitewater rafting as a team building exercise for work, and he fell out of the boat and was pulled back in.  Well, actually, the boat was filled with so much water, that he floated out, but anyway, I am grateful he wasn't hurt and he got home safe.

I'm praying for:  A friend who's father just received a very bad cancer diagnosis, but his continued good mood and improved health, enough so that he is leaving on vacation with them to Florida.  It will be good for them all and a nice memory.  I'm praying for my family members as we lost my Aunt Dot this week.  She has been in bad health and in a nursing home for some time.  She has gone on to glory and for this we can rejoice.
