Wednesday: Pork Chops with Potatoes, Broccoli
Thursday: It's New Years Eve! Snacky stuff is on the menu: Paula Deen Chili Dip, Rotel Dip with Scoop corn chips, and maybe Pizza Crescent Rolls (my family loves those things)
Friday: Crock Pot White Beans and Ham, Sauteed Cabbage with Onion, and Cornbread
Saturday: Hoping for a date night!
Sunday: Italian Pot Roast, Brussel's Sprouts, Noodles, and a new recipe, 7-up Biscuits.

Menu for week of December 2lst
Monday: (freezer meal) Meatloaf dinner (didn't get to this last week)
Tuesday: Lovely Leftovers
Wednesday: (freezer meal) Italian Dump Chicken, Rice, Green Veggie or Salad
Thursday: Taco Chili (going to my Mom and Dad's for Christmas Eve)
Friday: Christmas Day (hubby sleeps after working nights so when he wakes up it's breakfast!)
Cinnamon Roll French Toast, Hash brown Casserole, Juice
Later that evening? Who Knows???
Saturday: Christmas Feast at my house: Ham and Turkey from Honey Baked Ham, Sweet Potato Casserole, Mashed Potatoes and Gravy, Stuffing, Broccoli Casserole, Macaroni and Cheese Layered Salad, Cranberry Relish, Deviled Eggs, Rolls, Stack Cake, Cheesecake, Pumpkin Pie, oh my! No, I'm not doing all the cooking. My Mother-in-love is providing some of this food too. It will be so good. My mouth is watering just thinking about it!

Cheese
and Sausage Balls
8
oz. Cheddar cheese, grated
1
lb. sausage
3
c. Bisquick
Work
together with hands. Roll into medium size balls and bake 20 minutes
at 400 degrees until done.
Crock
Pot Taco Soup
1
lb. ground beef
16
oz. kidney beans
11
oz. corn
10
oz. Rotel
taco
seasoning packet
28
oz. tomatoes
small
can green chilies
16
oz. pinto beans
1
small package Hidden Valley Ranch dressing
Brown
beef and drain. Add all other ingredients and beef to crock pot and
stir. Do not drain cans. Simmer on low 6-8 hours. Good with chips
or Mexican cornbread.
Pam's Layered Salad
Chop
one head of lettuce and place in glass bowl. Over this put one onion,
chopped and 1 green pepper, chopped. Over this pour one can of
drained peas. Over this lay sliced cooked eggs about 4 or 5. Next
cover the entire surface with mayonnaise. Sprinkle grated cheese
liberally over all. Top with bacos or real bacon bits. Refrigerate
all day before serving.
Crunchy Sweet Potatoes
4 cups sweet potatoes, mashed
(canned)
2 eggs
1 c. coconut
1 t. vanilla
1 stick margarine
½ c. sugar
½ cup milk
½ cup plain flour
1 cup nuts
1 cup brown sugar
1 stick margarine
Mix
first 7 ingredients and pour into 9 inch baking pan. Mix next 3
ingredients and sprinkle over sweet potatoes. Chip butter over
mixture and bake 45 minutes at 325 degrees.
Classic Broccoli Rice
Casserole
2 cups instant rice
2 pkg. chopped broccoli
2 cans cream of mushroom soup
2 stalks celery, chopped
1 small onion, chopped
1 ½ sticks margarine, melted
1 small jar Cheez Whiz
1 small can French onion rings
Mix
all but onion rings. Bake 350 degrees for 1 hour. During last 5-10
minutes top with onion rings.
Perfect Mashed Potatoes
2 ½ - 3 lb. medium sized
all-purpose potatoes, peeled
water
¾ c. very hot milk
3 T butter, cut-up
¾ t. salt
1/8 t. pepper
Put potatoes in a large sauce pot
or Dutch oven and cover with water. Cover and bring to a boil over
high heat. Reduce heat to moderate and simmer 30-35 minutes, until
potatoes are tender. Drain potatoes. Chop up fine. Add hot milk at
once and mix potatoes. Stir in butter, salt and pepper. Beat
vigorously with a fork or wooden spoon, then stir over moderate heat
until just heated through. Makes just over 5 cups. 8-10 servings.
Good with Roast Beef or Pork.

Hello friends and family. Thank you for stopping by my little spot on the world wide web. We are back from our trip to South Carolina. It was a nice trip with beautiful weather. We walked out on the Surfside Pier on Friday and it was 75 degrees! Thank you Lord for our safe travels and fun together as a family.

Chaos Cottage Happenings
Monday: School Run, lots to do around the house because I've been sick with a cold and have let things slide, 1:00 vet appointment for Toby, School Run again at 10 PM!!! (Crazy Play Practice)
Tuesday: School Run, clean baths, laundry, clean out fridge, trash and recyclables to curb, Roomba/Mop, School Run again
Wednesday: School Run, Groceries, School Run again.
Thursday: Early School Run, Roomba/Mop, Car Tags (bought new cars and need to put our personalized plates on them), Hubby off work tonight so seeing daughter's play and eating out dinner, Hubby to pick up daughter around midnight because they all go out to eat after the play at IHOP!
Friday: School Run, quick pick up and tidy house, kitchen duty, laundry, afternoon doctor's appointment for me, another School Run
Saturday: Unpacking, unpacking, unpacking, daughter to do her weekend chores, no where we have to be for a change. Yippee!!!

Cottage Happenings for week of September 28th
We went car shopping on Monday and Hubs took the night off. We went looking for a particular car that was advertised online and ended up not getting it as they didn't have it and ended up buying two cars. I kidded with the salesman that it was the ole Bait and Switch. We hadn't anticipated buying two at this time, but we found a couple good bargains too good to resist. One was leaving for auction the next day and was really priced to sell. We scooped them up. Now I have a 2013 Ford Edge and Hubs has a 2012 Lexus ES and my 2000 Lexus RX, which has been well loved, is going to be sold to my nephew who has wanted it for a long time. The 2002 white Lexus RX will remain for my 16 year old to drive for a few years. We love the Lexus brand. Our family has had four. They are good cars and will last 300,000 miles. That's why ours are so old! So needless to say, any plans I had for the day were shot as we spent most of the day at the dealership. So on to the rest of the week.
Tuesday: Daughter is not feeling well and is staying home from school so I took advantage of that and slept in. Nice! So here are the plans for the rest of today: I need to do some house cleaning. Didn't do much of that over the weekend besides laundry. I have a 2:00 vet appointment to take in a cat for blood work as he has dental surgery tomorrow. I need to call and make an appointment to get a car detailed (the one I am selling to nephew). Run Roomba and swiffer and mop where needed. I plan on making a hardy dinner tonight and would like to start it early enough that Hubs can take some in his lunch to work tonight.

What's happening at the Cottage this week
I feel pretty good about the things I accomplished last week on my to-do list. If anything, I didn't get as many moving boxes unpacked as I would have liked. But those always get pushed down to the bottom of the list. We ended up not going to Atlanta. Originally, I wanted to go to Ikea. It's the closest one to us. But, after reading some articles online, I changed my mind, and hubby was of like mind. Just google what to expect when going to Ikea and you will get the idea. We didn't have anyway to haul everything back and shipping is expensive. So there's that. If we had one in our town, or nearer, I'd be there. I need bookcases.
Hubby did help me get the curtains hung and installed the additional shelving in three closets. This house came with closet organization already in them, we just added more shelves and brackets to take full advantage of the space. Now, I have a place to put more things as I am unpacking. Yay me! And we got the dining area arranged the way I like and removed some things from there that didn't belong there. It's starting to look like a nice place to dine!
I plan on continuing the Cottage Happenings posts for a while to help me with accountability. I do seem to do better with lists and taking time to plan for the things I need to do during the week.

My plans for my cottage this week:
Today was a pretty productive day. It is Labor Day and I did labor. lol Hubby also left for work a while ago to work a night shift and will get paid double time and a half, I believe. So we work on Labor day! Yes we do!
I got to check off many things on my to-do list today. I rarely get to everything. I usually run out of steam before I can, but here is what I have accomplished today:
Good breakfast for the hubs and I
Put away all clean clothing
Did two loads of darks and and load of lights and will probably get to a load of whites before the evening ends
I unloaded the dishwasher, reloaded it and hand washed a sink full of dishes
Picked up the house so that Rosie the Roomba can do her job (I just love her!)
Got husband to move a table for me. Muscles!
Got husband to get his techy gadgets off the dining room table so we can actually eat there if we'd like - lol
Husband broke down boxes that I had emptied (yes I am still unpacking from our move. I don't think I will ever get done!) and he took the good ones we may sell or donate to the garage and put the others in the recycling - more muscles!
Had family meeting (school stuff, chores, calendar, etc.)
Bought a few groceries
Filled up my gas tank
Put a roast in the crockpot
Made my husband lunch
Packed his lunch to take to work
Daughter and I ate a good lunch
Later, daughter and I will have a good dinner - Yum!
Clean up Kitchen
Watch a show or enjoy some YouTube!

That's my plan for the week. Some routine, some to-do's that if I didn't plan them, they wouldn't get done, etc. I'm a list maker and I find I accomplish more if I have a list and can check my to-do's off.
I may or may not post my plans for my cottage every week. We'll see how this goes. I want to get this cottage unpacked and neat and tidy so that we can have guests over. Our parents haven't even seen our new home yet! I know, but Hubby worked two months this summer of nights which were four nights with one night off, continuously and is about to start that again for at least six weeks. This is unusual and has kept us from getting a lot of work done around here. Just thought I ought to explain. We're not really that lazy, ya'll. lol

Monday: Dinner at my Mother-In-Love's house. It is our 4th of July dinner that was postponed due to hubby's work schedule. I'm sure it will be yummy!
Tuesday: Leftover Weight Watchers Mexican Casserole
Wednesday: Spaghetti Squash with Turkey Meatballs and Marinara, and a Salad
Thursday: Probably leftovers!
Friday: Zucchini Pepperoni Pizza and Salad
Saturday: Out-maybe Chinese food
Sunday: Going to visit my Mom and Dad and take them lunch (to be decided that day) and may get takeout for dinner that evening as well.

Oh where oh where have I been?
I've been MIA for almost two months. It's because we moved and I haven't given this blog any of my time. Today is the first day that I actually drug out my laptop. I've been using my ipad mini since before and after the move.
Here is a picture of our new home which was taken in the spring before the flowers and trees were in bloom. It may look deceiving as this home is over 3300 square feet. It has a very nice sized finished basement.
The new house is nowhere near visitor ready. It's been slow unpacking. My husband still has about a month of nothing but night shift which is four nights on and one night off. My daughter and I have to be quiet during the day so not much unpacking, if any, goes on then. I do manage to do the laundry without bothering him. We have also spent many days at the old house doing work. We still have a few odds and ends there, but for the most part, we are now done doing work there and we had it cleaned. On one of hubby's nights off we will probably go there and load up a few more things. We have had a couple of house viewings on the old house this week and we are in one couple's top three and the other couple said it was too big. Keep praying for our old home to sell please!
I really love my new home and will love it more once it is all unpacked and organized. I'm determined to go through every box and weed out again any item(s) that I don't need.
I plan on posting my weekly menus again beginning next week. I haven't been doing a lot of cooking as most of my kitchen things are still boxed up. I have most of the basics that I need and just bought a new set of hard anodized pots and pans and I really love them! Here is the set I bought http://www.target.com/p/t-fal-ultimate-12pc-hard-anodized-cookware-set/-/A-15522806#prodSlot=_1_27 I thought the price was right and a good way to introduce myself to hard anodized cookware. I have a wonderful set of Stainless Steel cookware that will last my lifetime but I also like having nonstick.

What's going on in your corner of the world? Exciting news here.
Good afternoon. I am enjoying the sunshine here in East Tennessee today. It is a beautiful day here. Hope you are having a good day where you are. I am so thankful for God's blessings and give him all the glory! Amen?
My day started off with taking my 16 year old to school. Believe it or not, she has no desire to learn to drive. She feels like it is too much responsibility for her right now. It's kinda the opposite of most boys and girls her age but we are alright with it, as long as she is driving before college. I'm not getting up and driving her to her college classes. I'm going to retire my chauffeur's license at that time! Yes!!! Her last day of school this year is May 21st and we are looking forward to our summer break.
Saturday, my daughter had her sweet 16 party for family and her special friends. We had so much fun. It was deliciously catered and we had a chocolate fountain (graciously lent to us by dear friends), and lots and lots of candy. So her party was really sweet! We can't keep the candy around though, as it doesn't go well with our Weight Watchers plan! I'm going to send that to work with hubby to share with his co-workers. Her ice cream cake (what remains of it) is hidden away in the freezer in the garage. I'm sure it will make a reappearance further down the road, maybe when my nephews are visiting. Yes, that's a great idea!
Now for some exciting news...we have bought a new home! We don't have the closing date and are still finalizing things but we are so excited to find the home in the size we want, style we want, and area we want. For the last 3 years or so, my dear hubby has been commuting an hour to work and an hour home. That's on top of a 12 hour shift! That makes for a very long and tiring day for him. So we knew a move closer to work had to happen. For some of this time, he has stayed at his aunt's lakehouse with our four cats which put him only 30 minutes from work. The location of our new house will shave 40-50 minutes off his driving everyday. We couldn't be happier.
Our home went up for sale at the end of August, just when the peak selling time was dying down and we had showings throughout the winter and a couple of low ball offers. We didn't bite. We lowered the price twice and had several open houses. We got good feedback from viewers too. But, when the six month contract expired, we began thinking about how we can get the home we want before this one sells and we did some investigating into equity and bridge loans. Because, during that six month period our home was for sale, we saw three homes we would have liked to own sell to someone else. So, we got a bridge loan and began the search so we can move and get hubby closer to work, get our cats back living with us, and then relist our home while the market is hot. Several homes in my subdivision sold very quickly this spring and we are praying ours will do the same. I also think our home will show better when it is empty and we don't have to keep it looking good for potential viewers every day. You never know when an agent may call and want to see your house. It's hard work to keep it picked up and all the beds made and the bathrooms and kitchen immaculate. It's also been hard to be away from my pets. And it's hard on the hubby who works day and night shifts.
I very excited about the new house and I will post pictures as soon as I can. It will be a work in progress for a while as we have to move everything from our existing home and empty three, yes, I said three, storage units. Two of those units are small ones. We donated and gave away a lot of stuff and we still needed all that storage to make our house look presentable. Whew, we have a lot of stuff. Too much stuff. I am sure as we empty the storage units we will downsize even more. My nephews will come in handy to help us unload the storage unit and do some painting as well. They're handy like that.
So, stay tuned for more news of our move and sale of our home. Exciting things are happening around here. My summer will be very busy unboxing and decorating my new home. I'll bring you along too.

Monday: Soup, Crackers and Cheese, Fruit
Tuesday: Smoked Sausage, Yellow Rice, Sauteed Cabbage with Onions
Wednesday: Chicken Enchiladas - make a pan for the freezer, Salad
Thursday: Pizza Casserole-make one for freezer (carry over from last week), Salad
Friday: Mexican Chicken Rolls -freeze extras (carry over from last week), Baked Potato, Salad
Saturday: Ranch Crock Pot Chops - freeze a bag, Stuffing, Green Veggie, Sweet Potato for daughter?
Sunday: Lunch-Manwich and Tots, Dinner-(freezer meal), Chicken and Wild Rice, Green Veggie, Salad

Menu for week of January 5, 2015
Here's my menu plan for this week. It's a feed the freezer week:
Monday: Teriyaki Chicken, Asian Veggies and Rice (didn't get to this one last week)
Tuesday: Veggie Burgers and Sweet Potato Fries
Wednesday: Mexican Chicken Rolls (extras to feed the freezer), Corn, Salad
Thursday: Pizza Casserole (extra pan for the freezer), Salad
Friday: Out? (maybe a family night with a movie?)
Saturday: Potato Soup for lunch and dinner out (friend's birthday)
Sunday: Bourbon Chicken (extra to feed the freezer), Yellow Rice, Veggies

My goals for 2015
As I said in an earlier post, my goals for this year are much the same as previous years. But my number one goal is to sell this house and move to a new one. We had a showing today, so maybe things are picking up again.
So here are my goals for 2015:
1. Sell home.
2. Buy new home.
3. Unpack, unpack, unpack. Yay!
Family Goals:
1. More date nights (at least once a month).
2. More family nights (movies, dinner out, events, game nights, etc.
3. More visits with family.
Personal Goals:
1. Lose Weight.
2. Exercise.
3. Make needed doctor/dentist appointments.
4. Take daily vitamins/supplements.
5. Drink 8 cups of water daily.
6. Get to bed earlier (this is a hard one).
7. Continue to look into natural alternatives for medication.
Spiritual Goals:
1. Bible reading.
2. Prayer.
3. Church .
4. Gratitude journal.
Hobbies:
1. Scrapbooks caught up.
2. Learn more crochet.
3. Read more books (shoot, since I've discovered YouTube I have a hard time cracking a book!).
