Lasagna Roll-ups and Italian Bread Sticks



One of my meals I made for my family this week is a family favorite called Lasagna Roll-ups. Usually I double the recipe and freeze it in my Gladware pan which goes from freezer, to fridge to thaw, to the oven. We are only a family of three and this is perfect for us. But we decided to eat the second pan the next day for lunch and finished off the bread sticks as well. Here are the recipes for these two items.

Italian Bread Sticks

1 1⁄2 cup warm water
1 T. yeast
2 T. sugar
3 1⁄2 c. flour
1⁄2 tsp. salt
2–3 T. butter, margarine, melted, or extra-virgin olive oil
Garlic powder/salt
Parmesan cheese

Add the yeast to the warm water and stir. Let it sit for 5-10 minutes until bubbly.

Mix sugar, flour, and salt together. Add the yeast mixture and stir to mix well.

Knead for a few minutes until smooth. Let stand 10 minutes.

Pour melted butter/margarine or olive oil in a 9”x13” baking dish.

Press the dough into the dish, spreading it out to fill it completely.

Cut the dough into strips in the baking dish and sprinkle with garlic and/or Parmesan cheese as desired. (I usually add some extra melted butter or olive oil on top too, but I’m overindulgent like that. You really don’t need to.)

Cover and let rise for 30 minutes.

Bake 20 minutes in a preheated 375 degree oven until golden brown.

Lasagna Roll Ups

-6 lasagna noodles
-1/2 lb. sausage
-chopped onions
-1 (15.soz) jar spaghetti sauce
-1 (8oz) pkg. shredded pizza blend cheese

-Cook lasagna noodles according to pkg. directions.
-Rinse and drain; set aside.
-In a skillet cook the sausage and onions.
-Drain.
-In a bowl mix 1 cup of the spaghetti sauce and sausage together.
-Spread 1/4 cup of the meat sauce onto each lasagna noodle.
-Top with 1 Tbls. cheese.
-Carefully roll up each noodle and place seam side down in an 8x8 baking dish.
-Spoon remaining sauce over top and sprinkle with remaining cheese.
-Bake @ 350 for 20-30 minutes........

The Lasagna Roll-ups get messy when you are making them. Or is it the cook gets messy. Anyway they are delicious. The bread sticks were very easy to make and boy did they smell yummy.
