Menu for week of March 25th

Monday:  Turkey Dawgs and Fries, Cantaloupe

Tuesday:  Cheesy Chicken Monterey (new recipe), Tortilla Chips and Queso

Wednesday:  Favorite Chinese Take-Out

Thursday:  Spaghetti Casserole, Salad, Texas Toast

Friday:  Dinner Out with Friends

Saturday:  Pizza Night!

Sunday:  Easter Dinner Out with Family

This will be an easy week for me.  Trying a new recipe below:

Chicken Monterey

1 pkg. Knorr Rice Sides-Chicken
11 oz. can corn, drained
11 oz. can black beans, drained
4 oz. can chopped green chilies, undrained
1 T oil
1 lb. boneless skinless chicken breasts, sliced thin
1 c. shredded Monterey Jack cheese

Prepare rice mix as package directs.  Stir in corn, beans and chilies.  Meanwhile heat 1 T oil in 12 inch nonstick skillet over medium high heat and cook chicken, stirring frequently, 4 minutes or until chicken is thoroughly cooked.  Arrange rice mixture on serving platter, then top with chicken and cheese.  4 servings
