Tuesday: Potato Flake Chicken (recipe below), Corn on the Cob, Steamed Broccoli
Wednesday: Lazy Lasagna (make 3 pans and freeze 2), Sauteed Zucchini
Thursday: Tomato Chicken Gumbo (freeze any leftovers), Cornbread Muffins
Friday: Chili Dawgs, Natural Chips
Saturday: Crock Pot Pork Loin Chops, Green Veggie, Rice Pilaf
Sunday: Lunch-Ham and Cheese Quiche, Fruit Salad; Supper: Salmon Patties, Mixed Beans, leftover Cornbread Muffins

Potato Flake
Chicken
2/3 c. mashed potato
flakes
1/3 c. grated
parmesan cheese
1 t. garlic salt
4 boneless skinless
chicken breast halves (8 oz. Each)
1/3 c. butter,
melted
In a shallow bowl,
combine the potato flakes, parmesan cheese and garlic salt. Dip
chicken in butter, then coat with potato flake mixture.
Place in greased
13x9x2 inch baking pan. Bake, uncovered 350 degrees 35-40 minutes or
until juices run clear. Broil 4 minutes from heat 3-5 minutes until
lightly browned. 4 servings.
