Thursday: Zucchini Lasagna, Salad
Friday: 15 Minute Healthy Roasted Chicken and Vegetables and Asparagus
Saturday: Salisbury Steak and Macaroni and Cheese, Broccoli Salad
Sunday: Chicken Salad and leftover Broccoli Salad, Deviled Eggs

Menu for week of November 14th
Some of my plans this week are carry overs from last week. Daughter and I are going out of town on Saturday so Hubby is on his own!
Monday: Skinny Fiesta Casserole
Tuesday: Meatball Parmesan Casserole with Zoodles
Wednesday: Meatloaf (Paula Deen's recipe), Corn Casserole, Green Bean Bundles
Thursday: Bourbon Chicken, Stir-Fry Asian Veggies
Friday: Pasta Fagioli

Tuesday: Yearly Mammogram
Wednesday: Visit Parents

Menu for week of November 7th
Monday: Cheesy Ranch Chicken (freezer meal), Pork and Beans, Chili Cornbread (boxed)
Tuesday: Snowtime Beef Casserole (recipe below) and salad
Wednesday: Hearty Bean Soup and Corn bread
Thursday: Fried Cabbage and Smoked Sausage, leftover corn bread
Friday: Skinny Fiesta Casserole, Veggies and Ranch for dipping
Saturday: Meatball Parmesan Casserole and Salad
Sunday: Lovely Leftovers
Snowtime Beef Casserole
1 pound ground beef
16 oz. tomato sauce
1/4 cup chopped onions
1 teaspoon dried parsley flakes
1/2 teaspoon crushed oregano
1 teaspoon crushed basil
3/4 teaspoon salt
1/4 teaspoon pepper
2-10 oz. pkg. frozen chopped spinach, cooked and drained
1 pint cottage cheese
8 oz. mozzarella cheese slices
Brown beef in skillet; pour off fat. Stir in tomato sauce, onions, herbs, 1/2 teaspoon salt and pepper. Simmer uncovered 10 minutes stirring occasionally. Combine spinach, cottage cheese and remaining 1/4 teaspoon salt. Spoon spinach around edge of baking dish (9x13). Pour beef mixture into center. Cut each cheese slice into 3 strips and arrange in lattice design over meat. Bake at 375 degrees for 20 minutes.

Friday: Chicken Parmesan Casserole, Roasted Asparagus
Saturday: Slow Cooker Herb Roasted Turkey Breast, Green Bean Bundles, Loaded Cauliflower Bake
Sunday: Lovely Leftovers
