Menu for week of March 28th




Monday: Tuna Egg Foo Yung (a hubby favorite), don't know what I am going to make for me, daughter is eating with grandmother

Tuesday: Picnic Casserole, Salad

Wednesday: Baked Chicken Parmesan, Spaghetti with Sauce

Thursday: Sausage Quiche, Biscuits, Fruit

Friday: Favorite Beans and Rice (Sour Cream and Cheese for topping)

Saturday: Potato Flake Chicken (new recipe), Broccoli-Rice Casserole, Corn, Rolls

Potato Flake Chicken

2/3 c. mashed potato flakes
1/3 c. grated Parmesan cheese
1 t. garlic salt
4 boneless skinless chicken breast halves (8 oz. Each)
1/3 c. butter, melted

In a shallow bowl, combine the potato flakes, parmesan cheese and garlic salt. Dip chicken in butter, then coat with potato flake mixture.

Place in greased 13x9x2 inch baking pan. Bake, uncovered 350 degrees 35-40 minutes or until juices run clear. Broil 4 minutes from heat 3-5 minutes until lightly browned. 4 servings.


Sunday: Potluck at church (taking Macaroni and Cheese and Deviled Eggs), Supper-Hot Dogs and Paula Deen's Chili Cheese Dip and Tortilla Chips and a movie!

I'm trying to use up my pantry and freezer stock and this week, it looks like I won't need to buy very much at the store.
