My menu for week of September 10, 2018
Here's my plan for feeding my family this week. Go to I'm an Organizing Junkie to get menu planning inspiration from lots of other families.
Monday: Pasta with Tomato and Basil, Caesar Salad, Garlic Toast
Tuesday: Dinner out with the Fam
Wednesday: Easy Pastafazool
Thursday: Pam's Chicken Dish for the Crock Pot, Zucchini Casserole
Friday: Lil' Cheddar Meatloaves, leftover Zucchini Casserole
Saturday: Texas Chicken Nachos, Mexican Cauliflower Rice
Sunday: Lovely Leftovers

Easy Pastafazool
8 oz. lean turkey or beef
½ cup chopped onion
10 oz. can red kidney beans, rinsed and drained
15 oz. can Hunt's chunky tomato sauce
14 ½ oz. can beef broth
1 ¾ cup water
1 1/3 c. uncooked elbow macaroni
2 T chili seasoning
2 T Italian seasoning
¼ c. grated fat free Parmesan cheese
In a large saucepan, sprayed with olive oil Pam, brown meat and onion. Add beans, sauce, broth, water, uncooked macaroni, chili seasoning and Italian seasoning. Mix well to combine. Bring to a boil. Lower heat, cover and simmer 15 min. or until macaroni is tender. Just before serving, stir in cheese. 6 servings. 1 ½ cup serving is 3 pts., 184 cal., 4 g. fat, 4 g. fiber.
