Menu for week of June 27th




I've been bad, real bad. Last week, I just had the blahs and couldn't get motivated. I finished up homeschooling daughter except for some math that hubby is doing with her. Her grades have to be given to our umbrella school by the end of the month. It seems I couldn't get motivated to do anything around the house because I knew that deadline was looming over my head. Good excuse. I finished at the middle of the week and just said "ahh...I'm done." Knowing I needed to be packing and readying the house for sale, all I could do was sit and veg. Bad excuse. I must be crazy to do this knowing I have so much to do. So this week, I am vowing to get off my fat bottom and get to work.

Oh, and last week's menu didn't do to well. We did have the beans and rice and one night we had pizza delivery. We did the hotdogs and chili and then I even did pigs in blankets with pasta salad. Yes, we love hotdogs. We buy the chicken ones and they are cheap and very tasty. We had Panera bread soup and sammies on Friday night thanks to a gift card for cat sitting and I did grill out the chicken that was planned with the alfredo and pasta but on Saturday. So I was about 50/50 with my menu. I don't know about you, but I don't always fix what I plan, but if I did my grocery shopping, I usually still have the ingredients to fix that meal another night or another week. So here is my plan for this week:

Monday: Making the green beans, potatoes and ham meal planned yesterday, as we had plenty of Alfredo leftovers to eat on Sunday.

Tuesday: Spaghetti, Salad, Sauteed Zucchini and Onions, Red Lobster Cheese Biscuits (see recipe-so easy and yummy!)

Cheddar Drop Biscuits (like Red Lobster's)

2 cups reduced fat Bisquick
2 oz. shredded reduced fat sharp Cheddar cheese
¾ cup skim milk
Pam
2 T reduced fat margarine, melted
¼ t. garlic powder
½ t. dried parsley flakes, crushed

Combine Bisquick and cheese in a bowl; make a well in center of mix and add milk, stirring until dry ingredients are moistened. Drop dough by rounded T's 2 inches apart on baking sheet sprayed with Pam. Bake 450 degrees for 8 minutes. Combine margarine, garlic and parsley; brush over biscuits. 12 servings.

Wednesday: Bean Burritos, Rotel Cheese Dip and Tortilla Chips

Thursday: Potato and Ham Scallop, Corn on the Cob, Rolls

Friday: Bachelor Bean Bake, Fried Potatoes or Mashed Potatoes, Corn Muffins

Saturday: Sloppy Joes, Chips or French Fries

Sunday: Leftovers or Sammies
