Menu for week of April 14th
As usual, there were several meals we didn't get to in the last week or so and I will repeat them again on my menu this week. The good thing is that I already shopped for those meals so I have all the ingredients for them and I won't have to buy much at the store this week. My daughter turns 15 on Easter Sunday and we are having a birthday party on Saturday and I do have some food to make for that but otherwise, groceries should be light this week. Here's my plan:
Monday: Chicken Chow Mein, Asian Veggies
Tuesday: Italian Veggie and Pasta Soup, Garlic Toast
Wednesday: Creamy Mexican Chicken Pasta, Salad
Thursday: Hamburgers and Fries
Friday: Oven Fried Chicken, Layered Salad, Fresh Corn on the Cob
Saturday: Birthday Bash
Sunday: Easter Sunday Dinner out

Monday: Ham and Ravioli Bake, Salad, Garlic Knots
Tuesday: Cajun Chicken, Yellow Rice, Green Veggie
Wednesday: Potatoes and Sausage, Green Veggie or Salad
Thursday: Chicken Chow Mein, Asian Veggies
Friday: Out
Saturday: Baked "Fried" Chicken, Potato Salad, Roasted Asparagus
Sunday: Ground Beef Stew, Cornbread

Menu for week of March 31st
Here's my plan for feeding my family this week:
Monday: Out
Tuesday: Chicken Las Vegas, (recipe below), Salad
Wednesday: Burgers and Fries
Thursday: Red Beans and Rice, Cornbread
Friday: Stouffer's Lasagna (on sale and had a coupon :D), Salad
Saturday: Ground Beef Stew
Sunday: Cajun Chicken, Yellow Rice, Green Veggie

Chicken
Las Vegas
6 boneless chicken breasts
1
can cream of mushroom soup
1/2
pt. sour cream
1
(6 oz.) jar dried, chipped beef
Mix
together soup, sour cream and dried beef. Roll chicken in the mixture
and place in casserole dish. Pour remaining mixture over chicken.
Bake covered at 200 for 4 hours. Serve over rice or noodles.
Note:
This can be cooked in a slow cooker or Crock Pot for 4 to 6 hours.

It's springtime in East Tennessee. The daffodils are in bloom as well as the dogwood trees. It's beautiful! Here is what I'm feeding my family this week:

Wednesday: Dutch Meatloaf, Mac and Cheese, Corn on the Cob
Thursday: Crock Pot Peanut Chicken, Rice, Asian Veggies
Friday: Chicken Las Vegas, Baked Potato, Salad
Saturday: Red Beans and Rice, Cornbread
Sunday: Lovely Leftovers

I didn't fix everything I had planned for last week as we had more leftovers than anticipated and one day I made breakfast as a meal. Here is my plan for this week:
Monday: Roasted Chicken, Mashed Potatoes and Gravy, Green Veggie
Tuesday: Chicken Salad Sammies, Mixed Fruit
Wednesday: Sausage Casserole, Corn on the Cob
Thursday: Chicken Casserole (freeze a pan), Salad or Green Veggies
Friday: Chicken Fajitas, Chips and Salsa
Saturday: Cook out with friends
Sunday: Ranch Crock Pot Chops (freeze several bags), Scalloped Potatoes, Green Beans

Monday: Casserole Espanol, Salad
Tuesday: Down Home Chicken and Noodles, Corn on the Cob, Salad (put a pan in the freezer)
Wednesday: Quick and Zesty Vegetable Soup, Cheese and Crackers
Thursday: Ham and Cheese Ziti, Roasted Asparagus (put a pan in the freezer)
Friday: Turkey, Mashed Potatoes, Green Beans, Carrots, Rolls
Saturday: Chicken Casserole (use leftover turkey and make a pan for the freezer), Salad
Sunday: I'm thinking leftover clean up or pizza!
