My Menu This Week-All 3 Meals



Monday:

Breakfast-Bacon, Egg and Cheese Biscuits
Lunch-Leftover Brunswick Stew
Dinner-Dum Dum Depression Casserole (never got to this last week), Mayonnaise Rolls and Tossed Salad

Tuesday:

Breakfast-Pancakes and Link Sausage
Lunch-More Stew or Leftovers
Dinner-Golden Chicken and Noodles (another recipe I didn't get to make), Salad

Wednesday:

Breakfast-One Eyed Sailors, Bacon
Lunch-Leftovers
Dinner-Probably more leftovers!

Thursday:

Breakfast-Bagel with Egg, Cheese and Canandian Bacon
Lunch-Soup and Sammie
Dinner-Lil' Cheddar Meat Loaves (freeze extras), Scalloped Potatoes, Peas

Friday:

Breakfast-Sausage and Cheese Muffins
Lunch-Egg Sammie
Dinner-Pintos, Leftover Scalloped Potatoes, Fried Okra, Cornbread

Saturday:

Breakfast-Cinnamon Rolls
Lunch-Macaroni and Cheese, PB Sammies
Dinner-Easy Chili

Sunday:

Breakfast-Biscuits, Eggs, Bacon, Fried Potatoes
Lunch-Crock Pot Chops, Noodles, Corn, Crescent Rolls, Pumpkin Pie
Dinner-Leftovers

A few recipes I will be making this week:

This is a family favorite of ours. I have made it several times and for company.

Texas Lasagna

1 lb. lean beef or ground turkey
1 envelope taco seasoning mix
½ cup chopped onion
28 oz. salsa, drained
cooked lasagna noodles
2 c. shredded light Cheddar cheese
2 c. shredded light Mozzarella cheese
16 oz. fat free cottage cheese

Brown the meat in a skillet, stirring until crumbly. Add the taco seasoning mix and onion. Cook until the onion is tender; drain. Add the salsa. Simmer for 35 minutes. Reserve a small amount of the cheddar and mozzarella cheese for topping. Alternate layers of meat sauce, noodles, cottage cheese and cheeses until all ingredients are used ending with the remaining cheeses. Bake 350 degrees 45 minutes. 6 servings.


No sure where the title for this one came from. I believe I found it in one of my Depression cookbooks.

Dum Dum Depression Casserole

In a buttered casserole, arrange sliced potatoes and onion rounds. Fry pork sausage and pour off grease. Alternate with a can of whole kernel corn and seasoning. Pour a can of tomato soup on top (or use canned tomatoes). Bake till done, depending on size of casserole.

This is a new one. It comes from a cookbook I bought at Dollywood recently.

Brunswick Stew

1 very well cooked 3 lb. chicken with bones removed
4 whole potatoes
3 sliced carrots
4 large diced onions
1 quart tomatoes
Cook these ingredients in chicken broth until tender. Add enough water until it's the consistency you like, along with:
1 box frozen lima beans (I'll cook fresh)
1 large can corn
1 T sugar
lots of pepper and a small piece of butter
Stir well and low simmer for about 30 minutes, or cook in a slow cooker for a few hours on low.

Breakfast-Whole Wheat Toast with Peanut Butter, Banana
Lunch-Leftovers
Dinner-Texas Lasagna, Texas Toast, Salad

Friday:

Breakfast-Pancakes and Sausage
Lunch-Leftovers
Dinner-Leftover night

Saturday:

Breakfast-Bacon, Eggs, Fried Potatoes
Lunch-
Dinner-Crock Pot Chops, Noodles, Brussels Sprouts, Mixed Fruit

Sunday:

Breakfast-Muffins and Yogurt
Lunch-Pot Luck at Church-tailgaiting theme
Dinner-Golden Chicken and Noodles, Layered Salad, Rolls

Breakfasts: Choose from Oatmeal, Eggs, Bacon and Toast, Cereal, Muffins, etc.

Lunches: Dd buying lunch at school most days, dh and I eat leftovers or sammies and soup.

Monday: Soup, Grilled Cheese, Grapes
Tuesday: Crustless Chicken Quiche (made with Sunday's leftover chicken), Mandarin Spinach Salad
Wednesday: Dinner at church-pizza
Thursday: Taco Turkey Burgers, Veggies and Dip, Cantaloupe
Friday: Hungry Jack Casserole, Salad, Brownies
Saturday: Easy Oven Fried Chicken, Oven, Fries, Salad
Sunday: Sweet and Sour Meatballs, Noodles, Green Bean Casserole, Veggies and Dip

I am trying several new recipes this week. If we like them, I will post the recipes later in the week.

October, already?

Okay, it's October and I love fall. But man it seems to arrive earlier every year! I have my fallish flag flying out front. That's the extent of my fall decor! lol I would love to buy some pretty mums but am not spending money on extras right now. I am more of a Christmas decorating type of girl anyway. I am sure it will be here before we know it.

Last week, my nephew came over and helped with some much need yard work. He weeded and mulch and seeded the bare spots in our lawn. He is handy that way. Thank you Travis!

Tomorrow, we are going to head out to visit Dollywood. It's supposed to be a nice day and I like going there when the temps are mild. We may try to go again during the Christmas season when all of Pigeon Forge and Gatlinburg celebrate the season with lot of Christmas decoration and lights. It's so pretty and festive.

Dh is still actively job searching. He is sure hoping that the employment rate picks up soon. It is discouraging but we are keeping our faith in the Lord and that He will provide Robert with the job He wants him to have and in His good time. You gotta have faith! Keep him in your prayers.

Well, gotta go. Got stuff to do around my chaotic cottage. Dishwasher needs to be rebooted (unloaded and reloaded), lunch prepared, pick up the house, put away clean clothing, and I haven't even showered or dressed yet today! Yikes! Must drink more coffee, must get motivated, must hit the to do list and accomplish good things today! Have a good one!
