Menu for week of May 3rd.



Breakfasts will consist of smoothies, muffins, pancakes and sausage, breakfast pizza, etc.

Lunch is usually leftovers or sammies.

Monday: Cheddar Turkey Bake (making extras to freeze) recipe below, Tossed Salad

Tuesday: Cream Cheese Chicken Casserole (making extras to freeze) recipe below , Roasted Asparagus

Wednesday: Chicken Burgers, Chips, Watermelon

Thursday: Lil' Cheddar Meat Loaves, Green Beans with New Potatoes, Salad

Friday: Chicken Chow Mien , Egg Rolls, Brown Rice

Saturday: Ham, Brussels Sprouts, Macaroni and Cheese, Deviled Eggs, Rolls

Sunday: Pizza Casserole (make extra to freeze)recipe below, Salad, Garlic Cheddar Biscuits

Cheddar Turkey Bake
Yield: 2 casseroles (4-6 servings each)
If you prefer, you can use chicken for the turkey and corn instead of peas.

Ingredients
2 cups chicken broth
2 cups water
4 tsp dried minced onion
2 cups uncooked long grain rice
2 cups frozen peas, thawed
4 cups cubed cooked turkey or chicken
2 cans (10-3/4 ounces each) condensed cheddar cheese soup, undiluted
2 cups milk
1 tsp salt
2 cups finely crushed butter flavored crackers (about 60 crackers)
6 TBSP butter or margarine, melted

In a large saucepan, bring the broth, water and onion to a boil. Reduce heat. Add rice; cover and simmer for 15 minutes. Remove from the heat; fluff with a fork. Divide rice betweem two greased 9-inch square baking dishes. Sprinkle each with peas and turkey.

In a bowl, combine the soup, milk and salt until smooth; pour over turkey. Toss the cracker crumbs and butter; sprinkle over the top. Cover and freeze for up to 3 months.

If you want to eat one immediately: Bake, uncovered at 350 degrees F for 35 minutes or until golden brown.

To use frozen casserole: Thaw in the refrigerator for 24 hours. Bake, uncovered at 350 degrees F for 70 minutes until heated through.

Cream Cheese Chicken Casserole

2 boneless, skinless chicken breasts, cooked
3 cups cooked rice
1/2 teaspoon Black Pepper
1/2 teaspoon Salt
1 ounce Italian Salad Dressing Mix -- low salt
1 can Condensed Cream of Chicken soup
8 ounces Cream Cheese -- cubed
1 med Onion -- chopped
2 tablespoons butter-- to cook onion
couple shakes of garlic powder

Cook onion in butter. Add soup, salad dressing, salt, pepper and garlic to a sauce pan. Heat to simmer point. Cube cream cheese and add to soup mixture. Stir until cheese is melted. Add rice and cubed, cooked chicken. Mix thoroughly. Pour into a 9x9 pan. There's some left over for lunch the next day! Sprinkle with parsley for color, if you like. I put this in the freezer. Thaw and bake at 350 about 30 minutes, or until heated through.
Okay, I made this and I should have followed the directions and used the reduced salt dressing mix. Hubby couldn't find that at the store. Next time I will just omit the salt and then it should be less salty. Very tasty though and I would make again.

Pizza Casserole

2 pounds ground beef (I use ground turkey or chicken)
2 onions -- chopped
48 oz spaghetti sauce
1 1/2 tsp salt
1/4 teaspoon pepper
2 teaspoons italian seasonings
10 oz spiral macaroni
2 cups shredded mozzarella cheese
1/2 cup Parmesan cheese
Parmesan cheese

Brown and drain ground beef. Cook and drain pasta. Combine all ingredients in a large bowl. Mix well. Place in large casserole pan or 2 8x8 pans. Sprinkle
with Parmesan cheese and bake at 350 for 30 minutes.

Menu for week of April 26th




Breakfasts this week will consist of smoothies, muffins, pancakes and sausage, and breakfast pizza.

Lunch is generally leftovers for hubby and I.

Monday: Various leftovers from the weekend

Tuesday: Grilled Chicken, Layered Salad, Baked Beans

Wednesday: Having friends over and sharing BBQ

Thursday: Leftover Buffet

Friday: Cajun Beans and Sausage (recipe below), Cornbread

Saturday: Meatballs (recipe below), Pasta and Sauce, Salad

Sunday: Chicken Chow Mein (recipe below), Brown Rice, Egg Rolls


Cajun Beans and Sausage

2-15 oz. cans kidney or pinto beans (I use pintos already cooked from the freezer)
1 smoked sausage, cut into 2 inch pieces
2 t. cajun seasoning

In slow cooker combine all ingredients. Mix well. Cover and cook on low 3-4 hours or high 1 1/2-2 hours. Serve with white rice. 4-6 servings.

Chicken Chow Mein Freezer Recipe

1 1/2 cups cooked chicken, cubed
1 10oz can cream of mushroom soup
1 10oz can cream of chicken soup
1 can sliced mushrooms
1 can water chesnuts
6 oz evaporated milk
Needed on cooking day:
Small package of chow mein noodles
Combine all ingredients (except chow mein noodles) and place in small casserole. Preheat oven to 350F then bake for 30-40 minutes. Cool then freeze.
On cooking day:
Defrost, top with chow mein noodles and bake at 350F for about 15-20 minutes or until heated through.

Meat loaf

5 lbs ground beef or turkey
5 envelopes onion soup mix
5 cups oatmeal
5 eggs

For meatloaf I make it in a loaf pan, covered with foil at 350 for 1 1/2 hrs.

I also make meatballs-I use my meatloaf recipe, form it into meatballs and bake them ( about 20 minutes at 350). I put these in meal size portions in zip lock bags and freeze them. Sometimes we eat them with a cream sauce, sometimes with BBQ sauce, sometimes with a sweet sour sauce. Then some go into spaghetti sauce, and others get served as sandwiches with sautéd peppers.

This chest and dresser with mirror was a gift from my mother-in-love, and has been in the guest room. Robyn needed more drawer space and this just fit the bill.

There's her Tinkerbell bed. We need to do some tweaking to the canopy, it's just not right. lol

We still have work to do in the room. All her things haven't been displayed on the shelf that goes around the top of her room and we have dvd's and books to put in her bookshelf and things like that. But it was "done enough" for her to have her sleepover birthday party Friday night. The girls had a blast and Robyn has so happy with her room re-do.

Oh my goodness!

Made this recipe this afternoon. Should of taken a picture but three servings were already gone before I could grab a camera. I think there might be two servings left! I am definitely going to do this one again. I didn't use frozen strawberries, but used fresh ones that I sprinkled with a little sugar. Oh my! Delicious. All that was missing was some ice cream! Hubby says cobbler is not complete without ice cream.

Embarrassingly Easy Strawberry Cobbler

1 cup self-rising flour
1 cup sugar
1 cup milk
1/2 stick butter or margarine
1 quart frozen strawberries, drained

Preheat oven to 350 degrees. Stir flour, sugar, and milk together. Melt butter in dish in oven. Pour batter into dish over melted butter. Pour strawberries over batter. Bake 45 minutes. Let cool a bit before serving.

Try it. I think you'll like it too.

Photos of my darling daughter's bedroom are coming. Yes we are finished. I just have a little primping to do and organizing of her closet. It turned out beautifully. Thank you hubby for all your hard work.

I am so tired



I am so tired, but I must press on. Yesterday wore me out. I feel old and achy. I hate feeling this way. Today, I will make time to sit on the deck and soak up some of God's Vitamin D.

We took the first of a three-part 301 class at church yesterday. Next week we take a test to find out our gifts, called SHAPE. I can't wait. Then we went to service and it was the first message in a new series called The Pursuit of Happiness. I am looking forward to the entire series. I need a little happiness right now. Afterwards I came home and cooked lunch. Got to relax just a little when it was time to take Robyn to pick up her friend and take them both to Laser Quest for a youth activity. I dropped them off and then went to Books a Million for a cup of ambition and to peruse a new Paula Deen decorating book. Ooh, the photos! Lots of them were Paula's too. Did you know she has a dock house? It was so cute and cozy. And then it was time to go pick up the girls. We stopped for a soft serve vanilla ice cream cone and then off to church for A Night Of Praise. The music was awesome! Then it was time to take Robyn's friend home. We were hungry so I drove through Arby's and bought some chicken sammies and curly fries. I know, but I haven't had curly fries in a very long time. I couldn't eat it all, but it was delicious!

I'm tired today and my feet hurt. I didn't have my most comfortable shoes on yesterday. When my feet hurt, I hurt all over!!! Are you like that?

I have the dishwasher doing it's thang and I need to finish picking up and cleaning the kitchen before starting on tonight's dinner. I am still laundering linens from the guest room and Robyn's room. Robert is going to start on carpet cleaning up there today. Then, tomorrow he can shift furniture to the clean side of the carpet and finish the room. Wednesday, we should be able to start putting the rooms back in order. Robyn has been a big help carrying boxes of toys down two flights of stairs to the basement, where we will go through everything and only take back up the things she is keeping. That, in itself, will be a big job. But oh so worth it. My advice to anyone with children, don't wait 11 years to go through the toys! I may be exaggerating a little, but not much. Shame on me, but it's true.

Robert teaches his first Marketing class tomorrow night and he has spent a lot of time getting ready for it. He has a power point presentation to help with his lecture time. Once he gets the kinks all worked out on this one, future classes should be a breeze. I am praying all goes well and he enjoys teaching.

Robyn turns 11 tomorrow and after school I am taking her to my Mom and Dad's for a little visit. She also wants to borrow their Karaoke for her sleepover party on Friday. Her and her little friends will be rocking the house! I know she will have a fun time. She will enjoy showing off her "new" bedroom too.

Well, gotta go check the dryer and reboot the washer. Have a marvelous Monday!
